{"id":3720,"date":"2021-12-03T01:00:13","date_gmt":"2021-12-03T06:00:13","guid":{"rendered":"https:\/\/www.bygeorgejournal.ca\/?p=3720"},"modified":"2025-12-20T14:23:17","modified_gmt":"2025-12-20T19:23:17","slug":"greek-kourambiedes-the-christmas-cookie","status":"publish","type":"post","link":"https:\/\/www.bygeorgejournal.ca\/?p=3720","title":{"rendered":"Greek Kourambiedes &#8211; &#8220;The&#8221; Christmas Cookie"},"content":{"rendered":"<p><em><strong>Ingredients<\/strong><\/em><\/p>\n<p>Beat on medium speed until lightened in color and creamy:<br \/>\n3\/4 pound unsalted butter, softened &amp; 1\/4 teaspoon salt<\/p>\n<p>Beat until very fluffy and well blended:<br \/>\n2\/3 cup powdered sugar &amp; 1 large egg yolk<br \/>\n2 tablespoons brandy &amp; 1 teaspoon vanilla or almond extract<\/p>\n<p>And then gradually add and stir until well blended and smooth:<br \/>\n3 cups all-purpose flour, sifted<\/p>\n<p>1 cup Ground Almonds (optional)<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-16494\" src=\"https:\/\/www.bygeorgejournal.ca\/wp-content\/uploads\/2021\/12\/christmas_14-300x192.jpg\" alt=\"\" width=\"300\" height=\"192\" srcset=\"https:\/\/www.bygeorgejournal.ca\/wp-content\/uploads\/2021\/12\/christmas_14-300x192.jpg 300w, https:\/\/www.bygeorgejournal.ca\/wp-content\/uploads\/2021\/12\/christmas_14-150x95.jpg 150w, https:\/\/www.bygeorgejournal.ca\/wp-content\/uploads\/2021\/12\/christmas_14.jpg 400w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<p><em><strong>Instructions<\/strong><\/em><\/p>\n<p>1. Cover and refrigerate the dough until firm enough to shape into balls, about 1 hour.<\/p>\n<p>2. Position a rack in the upper third of the oven. Preheat the oven to 350\u00b0F (180\u00b0C). Grease cookie sheets.<\/p>\n<p>3. Pull off pieces of the dough and roll between your palms into generous 1-inch balls. Space about 1 inch apart on the sheets.<\/p>\n<p>4.\u00a0 Bake, 1 sheet at a time, until the cookies are faintly tinged with brown, 14-18 minutes; rotate the sheet halfway through baking for even browning. Remove the sheet to a rack and let stand until the cookies firm slightly. Gently transfer to racks to cool completely.<\/p>\n<p>5.\u00a0 Sift over the cookies until evenly coated: 1\/3 cup powdered sugar.<\/p>\n<p>6.\u00a0 If desired, 1 cup ground almonds may be added to this recipe.
